She Begins With Slicing Strawberries – But I Had No Idea You Could Do THIS With Them


Strawberries are one of summer’s special treats. Strawberry bread can become a family favorite that works for dessert or breakfast. Toppings are optional but add to the delicious taste of the bread. Strawberry bread can be a treat either warm or cold. You start by preheating your oven to 350 degrees Fahrenheit. Grease two nine by five inch loaf pans. Loaf pans are designed to make a bread loaf. The chef recommends using a cooking spray with flower to prevent sticking. Butter mixed with flower works just as well. Wash enough strawberries to make two cups after the strawberries have the center greenery cut away. You want two cups of sliced strawberries. The slices need to be one-quarter of an inch wide. Frozen strawberries work as well as fresh for this bread. Put the sliced strawberries in a bowl and add one tablespoon of sugar. Mix the sugar and strawberries together so all the strawberries are coated. Splenda will work if you cannot eat sugar.

Combine three and one-eight cups of flower with two cups of sugar in a large mixing bowl. Add one tablespoon of ground cinnamon, one teaspoon of salt, and one teaspoon of baking soda. Splenda can be substituted for the sugar but the bread may be a bit doughy. Stir the batter ingredients together until they are completely blended. Add one and one-quarter cup of vegetable oil and four beaten eggs to the strawberries. Blend gently with a spatula so the strawberries do not lose their shape. Fold the strawberry mixture into the batter mixture. Add one and one-quarter cups of chopped pecans. Fold the ingredients together until the mixture has a consistent texture. You want the nuts and strawberries as evenly distributed in the batter as possible.

Spoon the batter into the two loaf pans. The batter should fill the pans about one-half of the height of the pan. Smooth the batter out so it is an even height in the pans. Add a row or two of sliced strawberries to the top of each loaf. Bake the strawberry bread for 40 to 45 minutes. Use a toothpick to check when the bread is done. If no material clings to a toothpick pushed into the bread as far as the toothpick will go then, the bread is done. Ovens may not heat consistently so check each loaf separately.

Let the brad cool for 10 minutes. Turn the brad out of the pans and let cool completely. Slice the bread into one-half inch slices.

You can serve the strawberry bread as is. Toppings can be yogurt, whipped cream, or ice cream. You can make a special strawberry short cake by placing sliced strawberries and your favorite topping between two pieces of the strawberry bread.
